k&a: apple and cinnamon muffins


I have been enjoying a sunny morning but it's about to rain so relaxing with a book and a muffin would be ideal. I just posted my apple and cinnamon muffins recipe on kitchen & aroma and before the common reaction oh no, don't tempt me ... I can't have any sweets ... I'm too fat ... I'm on a diet then relax and look at the recipe. There is only one tablespoon of coconut oil in it, no butter or refined sugar. In our household these muffins are called appins, a word my hubby made up. Well, I call them my I-need-to-manipulate-my-hubby muffins and they are delicious. Enjoy!

  6. Well these appins look delish and I love how healthy they sound. I practice moderation so I never have to be on a diet. Have you ever noticed that the word "die" is in there lol

    Well I do have 2 beige ones of varying lengths so I suppose you could borrow one ;-)

  8. Well, there's still 100g of sugar, raw or not, it'll still affect the body in the same way apart from providing some trace minerals (the only good thing about raw sugar). But they certainly look yummy and like a special treat.
    Have you tried using pears instead of apples? Whenever I have very ripe ones I use them in muffins and they taste absolutely fab!

  9. Natalia: Of course sugar is sugar and sugar isn't healthy, but I'll choose the organic raw cane sugar over the other every day.

    I only have an Icelandic list of nutritional value and according to it 100 g of muffins contain a total of 50 g sugar (27 g is added sugar) and 27 g fat. So I think it is only fair to say that this recipe is way healthier than the store bought stuff.

    And I agree with you, pear muffins taste delicious.
